It has been discovered that some vegetables and fruits that should initially sustain and satisfy us contain substances that can harm us. Gluten is one of such importance. This protein helps during the plant germination phase, but it is a problematic plant component for some people. Glutens are just one example of protein known as a lectin and one factor in the plant paradox. Several years ago, plants could grow and thrive in peace, undisturbed, and healthy in producing the seeds that would become the next generation of their species. But when insects and other animals arrived, they saw tasty green vegetables and grains as dinner.

Plants have formulated impressive strategies to protect themselves and their seeds from animals of all shapes and sizes and humans. They may use various physical forms, such as color to blend into their surroundings, an unusual texture, a protective cover by making sand or soil clump, and many more. It's a harsh and unpredictable world out there for potential plants; so many are produced than will ever take root.

Plant seeds can be classified into two basic types. Some are babies that plants want predators to eat. These seeds are wrapped in a hard coating designed to survive a trip through the predator's GI tract. However, a large baby, such as a peach seed, might not be swallowed and instead be left behind. There are other naked seeds/babies that plants don't want to be eaten.

Plants that don't want their seeds to be eaten before the protective coating is wholly hardened use the color of unripe fruit (usually green) to convey the message “not yet” to the predator.
